Tomato & Egg Muffin (21 Day Wonder Diet: Day 5)

  • Poach the eggs in a pan of gently simmering water, until cooked as you like.
  • Meanwhile, toast muffins.
  • Divide tomato between two muffin halves; sprinkle with vinegar, top with eggs, then remaining muffin halves.

  1. Never would have thought of using balsamic in something like this, and it was delicious! Used a nice, thick aged balsamic, SO GOOD!!
     
  2. A nice filling breakfast. Instead of poaching the egg, I microwaved it in a custard cup that was about the same diameter as the English muffin. I added some freshly ground black pepper. A good healthy way to start the morning. Made for Healthy Choices ABC game.
     
  3. I will be making this again!!! I thickly sliced the egg and placed it in a Tupperware with the poached egg topped it with the vinegar, and S& P. I poached the egg for about 3-4 minutes. When I got to work I toasted the muffin and nuked the egg for 45 seconds. The yolk was almost cooked through, just a ribbon on yellow gold left.

At the minute, we are getting ready to move, which is forcing me to sort through my recipe cabinet. I have been trying out all those recipes that are scribbled on pieces of paper, or torn from magazines, so I can decide ifthey are keepers or not. So far I've found a lot of keepers, and will work at posting them on here. I'm passionate about a lot of things, mainly my kids, animals, and cooking. I won't even start on my peeves, we'll be here all night! lol" class="text-truncate svelte-1aswkii">
