Healthy Sandwich

"Mashing avocado isn't just for guacamole, it's also a good idea to use as a healthy alternative to butter or margerine. I think there is something in this sandwich for everyone, so don't be turned of that it's healthy or that it applies towards a vegan lifestyle. This recipe easily doubles if you want seconds or are making this for one other person."

  • 1 Spread the avocado over the tortilla.2 Combine all the other ingredients in a small bowl, then spoon it into the center of the tortilla.3 Fold the tortilla from the bottom first, then the sides, and enjoy immediately.

  1. Interesting lunch, but there is too much filling for my corn tortilla -- next time I will decrease the beans by half or put everything in salad greens for a salad. Interesting!
     
  2. I liked this for lunch today. I loved the textures, however the avocado didn't win me over. I really liked the freshness of the parsley, I think a bit of salt and pepper would have been good too. I used a whole wheat tortilla instead of a corn tortilla because its what I had.
     
  3. This is a fun little sandwich! I warmed the corn tortillas through before adding the toppings, and I used shredded cheese and shredded the carrot, to better stir everything together to be "glued" in with the avocado. It worked wonderfully. I had a very strong jalapeno, so I adjusted the amount to taste accordingly. I ended up with a little extra filling (having doubled the serving size for 2), and look forward to enjoying it later. Thanks for sharing! Veg*n Swap 31
     
  4. I enjoyed this sandwich, but had to make one major modification. I cannot buy soft corn tortillas in Australia, so I had to use a flour one. Also cut back on the cheese. I thought 1/3 cup was way too much. In future I would double the jalapeno and add a teaspoon of mayo and/or mustard to add a bit more moisture (personal preference). Must mention that for this contest, it was especially nice to have a recipe for 1.

I am an Israeli-Canadian who grew up in Montreal Quebec. I love to cook, especially for family and friends, and I love to experiment with recipes and try to do different variations of the same recipe. I did do part of cooking school, but found the place stressful and all the good recipes high in fat and calories, even the good ones. I don't have a fave cookbook, but I eat kosher. I have a dream and that is to own my own B&B one of these days. I also love creative writing, and maybe I like to try make up a recipe of my own and see if I'm good at doing that. I have to add that I do have some favourite chefs from the Food Network.
