directions

  • Sift together dry ingredients; set aside.
  • Blend together margarine (or shortening) and sugars.
  • Add egg & beat until light & fluffy then stir in vanilla.
  • Combine with dry ingredients & mix well.
  • Add remaining ingredients& mix well.
  • Drop by teaspoon onto greased or parchment-lined cookie sheets and bake in preheated 350°F oven for 12 minutes.
  • Allow a few minutes longer if you prefer crisp cookies.

  1. Chocolateee Good! Yes they are quick and easy. They stay nice and full don`t flatten out like some cookies do. You can`t even tell thay are made with oatmeal.
     
  2. This wonderful cookie makes you rub your tummy and say, "ahhhhhhh". We loved the combination of chocolate chips, oatmeal and nuts (I used walnuts). This is a real crowd pleaser and I will make over and over again. Thank you so much, CountryLady, for sharing this.
     
  3. Can't believe I haven't reviewed these yet, I've been making them for years! These are the best chocolate chips ever, and I don't say that lightly. I always make a double batch, and they get raves when I take them to someone's home.<br/><br/>I've made them with only brown sugar when I ran out of white sugar, but that makes them slightly too molassesy (although they're still great!) I use butter, always, and the texture and taste is perfect.<br/><br/>Thank you!!
     
  4. These were really good. Very fudgey chocolatey but not dense.. The mix was very dry and I had to read back over everything to make sure I'd followed it correctly... I did.. it's just dry. I loved the oatmeal in them.. and think I'll try them without the chocolate chips next time (I hear the gasps... LOL)
     
  5. My kids devoured these too within minutes. The only mistake I made was not doubling the recipe when I made it. Absolutely delicious!!

Tweaks

  1. I added coconut and omitted the nuts.
     
  2. These were really good, quick to put together and tasty too. I creamed the sugars and butter along with the egg in the food processor. Next, I added the dry ingredients and stirred the dark chocolate chips in by hand (about 3/4 c.); did not add nuts. I then placed everything in the fridge for about an hour. I baked them in a well preheated oven for about 11 minutes on a Silpat and they were perfectly soft inside and crisp on the outside. I would like to experiment next time and add some unsweetened shaved coconut and replace half of the butter with coconut oil. I'm thinking a Mounds cookie here :) Thanks for sharing, this one is a keeper!
     
  3. These were excellent. I cut down to a 1/4 cup chocolate chips, added nuts and used 3/4 cup butter instead of margarine. Next time I would add a few teaspoons coconut. I plan to make these again.
     
  4. I can't believe I haven't reviewed these yet. I've been making these cookies for a few years now. I like trying new recipes, but this is one I keep coming back to when I want a reliably delicious cookie that everyone will like. I usually use old-fashioned oats and like to replace some of the nuts (I use walnuts) with dried cranberries.
     
  5. This is an excellent recipe. I thought that the cocoa and chocolate chips might be too much chocolate but the chocolate flavor was not overwhelming at all. I like that this recipe does not use a lot of any one thing. I had just enough oats, nuts and margarine on hand! I notice that some of the other cowboy cookie recipes added coconut. I may add that to some of the batch next time but the recipe is perfect as is. I'm editing my comment because I've used this recipe a number of times since posting this. I tried this tonight substituting whole wheat flour for regular flour, Soy Garden Buttery Spread instead of margarine, walnuts and Hershey's dark chocolate chips. I didn't have quick cooking oats. I used old fashioned oats and ran them through the blender. I dropped the dough by tablespoonfuls onto a greased cookie sheet and baked for 10 minutes which made for nice soft cookies.

In the words of Tracy Byrd, "I'm from the country & I like it that way"!! On May 1, 2008 my husband and I started a new adventure. We'll be living in a 37 foot RV while our new home is under construction. Its out in the country on a dead end dirt road with lots of trees. For the next 4 months or so, most meals will be cooked on the BBQ and life will be full of challenges! We love spending quality time with our friends & family - especially the grandkids!!
